Dhilgee Uraga Raro #3, Ethiopia

Urago Raro is a washing station in Guji which buys coffee cherries from around 430 neighbouring farms. Urago Raro is owned by Snap Coffee, an Ethiopian company whose goals are to transfer the required know-how to neighbouring farmers, provide training in processing and cleaning methods and to protect the environment through waste recycling systems.

The farms that supply cherries to this washing station have high yields due to their high-standard farming methods and fertile soil. The farms are semi-forested, on average the size is 1-2 hectares with 1800-2400 trees per hectare. The average coffee cherry yield per tree is 3 kg. Cherries are handpicked and sorted.

After picking, the cherries are then pulped by a traditional Agaarde Discpulper. Skin and fruit pulp are removed before being wet fermented for 48 hours. Coffees are washed in channels and graded in water by density. Lower density and therefore, lower quality beans will float and be removed from our lot. After fermentation, soaking takes place for 2 hours.

Coffee is then dried over a 10-day period before final hand sorting over a 2-4 hour period.
